I may sound like a boomer here, but I want to be able to take one of these programs and expand it for my liking. Are there any exploits that are open-source?

Yes, there are plenty of open-source Flappy Bird–style clones on GitHub that you can freely modify and expand to your liking.

You mean "expand" the software, not "exploit" vulnerabilities, right?
If you want to customize it, you should look for similar open-source chess programs (like Stockfish, Lichess open-source projects). I'm not sure if Bookup/COW is open-source.
